Roast Duck with Five Berry Spiced Jam

Ingredients
Cooking Time: 30-40 Mins
- Duck: 2 duck breasts. Skin on.
1 tsp salt. For seasoning.
½ tsp black pepper.
½ tsp Chinese five-spice powder.
Optional 1 tbsp olive oil (For searing). - Glaze: ½ cup Auntie Rana’s Five Berry Spiced Jam.
1 tbsp balsamic vinegar.
1 tbsp dark soy sauce. Umami boost.
1 tbsp honey.
1 tsp Dijon mustard.
1 garlic clove, minced.
2 tbsp water. Adjusts consistency. - Optional: 1 to 2 tsp Auntie Rana’s Smoked Chili Oil. For smoky heat.

Cooking Directions
- Prepare the Duck: Pat the duck breasts dry with a paper towel. Score the skin in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt, black pepper, and five-spice powder.
- Sear the Duck: Heat a skillet over medium-low heat. Place the duck skin-side down and cook for 8–10 minutes, allowing the fat to render and the skin to crisp. Flip the duck and cook for another 3–5 minutes until the internal temperature reaches 130°F for medium-rare or 140°F for medium. Remove from heat and let the duck rest for 5 minutes before slicing.
- Make the Glaze: In the same pan, discard excess fat, leaving about 1 tbsp. Add minced garlic and sauté for 30 seconds until fragrant. Stir in Auntie Rana’s Five Berry Spiced Jam, balsamic vinegar, soy sauce, honey, and mustard. Simmer for 2–3 minutes until the glaze thickens. Add water if needed to adjust consistency.
- Glaze the Duck: Slice the rested duck and drizzle generously with Auntie Rana’s Five Berry Spiced Jam glaze.
- Optional: Stir in Auntie Rana’s Smoked Chili Oil into the glaze for a smoky-spicy finish, or brush a little over the duck before serving.
- Serve: Pair with roasted vegetables, mashed potatoes, or wild rice for a balanced dish.
